Jaime Guevara’s farm, Finca Don Jaime is in the Chalatenango region of El Salvador. He has around 3,000 trees per manzana on 6 manzanas of land. Jaime grows a combination of Pacamara, Pacas, SL-28, and Gesha varieties. Following in his fathers footsteps, Jaime learned how to grow and produce coffee and has now worked in coffee for 15 years.
The coffee grown at Finca Don Jaime is processed as both Washed and Honey: The coffee we are offering is his washed Pacas. The washed lots are picked and depulped, then fermented for 18–20 hours before being washed laid on raised beds and dried for 16 days, during which time it's rotated every hour.
According to Don Jaime “growing coffee is my life, it's exactly what I want to do." Although he has many jobs in his life, being at his farm is where he loves to be and working in coffee is what makes him happiest.
