Merry & Bright is a new end of the year Holiday concept where we plan to showcase a stunning coffee that is bringing something different to the table. In March 2019 Cofinet developed a unique fermentation protocol they are calling White Wine Fermentation. By combining anaerobic, aerobic and additional fermentation during the drying process, White Wine Fermentation adds a brightness and complexity to the traditional natural process profile.
This year we purchased 158 pounds of tcoffee grown by Jairo Arcila at Finca Castellón. After being picked, cherries are hand sorted and floated, followed by an exposure to a dry anaerobic fermentation of 30 hours. Next, the coffee is placed on raised beds until 20% moisture level is achieved. Afterwards, the coffee is placed inside GrainPro bags for 80 hours (at this stage fermentation is driven by natural yeast) and later left to dry on raised beds until 10.5% moisture level achieved.
We find that Jario Arcila's coffee is something special to share with friends and family. We can definitely say we've really never had anything like it! As soon as we tasted it we knew it had to be the first coffee to begin our Merry and Bright tradition.
