Isaac Rioja Tarillo owns 2ha of land in the Santa Rosa village in Huabal. He grows mostly caturra variety but also bourbon and typica plants. The high altitude at the farm and the cool, humid climate in the area gives the coffee an extra level of complexity with a very juicy, acidic cup profile.
Isaac picks his coffee with the help of his wife and in the peak of the harvest he and his neighbors mingas, where they combine resources and pick one anothers' farms. Once picked cherry is pulped and fermented hours before being dried on raised beds.
