Clearly we are fond of Bernard Ornilla's coffee. This year's honey processed coffee is his best lot yet! Honey process is a method in which coffee cherries are picked and sorted, their skins and pulps are then removed like most coffee but are then dried without washing off the sweet-sticky mucilage layer (where the term honey comes from) of the fruit. It uses less water than washed processed coffee which is an advantage for farms with little access to clean water. Plus, it's more Eco-friendly!
