This decaf starts with coffees grown by hundreds of smallholder farmers across southern Mexico — places like Chiapas and Oaxaca. When selecting lots for decaffeination, they start with coffees that already taste great on it's own. Those lots are then carefully sorted and blended before being sent off for decaffeination.
The process uses ethyl acetate, a compound that naturally shows up in sugarcane molasses fermentation. The green coffee gets gently steamed to open up its structure, then rests in an EA bath for about eight hours. EA is selective — it binds to caffeine without stripping away the character of the coffee — so what comes back to us is the same origin flavor, just without the caffeine.
