Pitaya comes to us from the hillsides of southern Huila, sourced through Maniwa Specialty Coffee. This lot is made up entirely of Pink Bourbon, a variety prized in the region for its bright character and naturally sweet cup.
Unlike some of the fruit‑forward Pink Bourbons you may have tried, this washed selection leans into comfort. It opens with a red‑apple sweetness, followed by gentle cinnamon spice and a brown‑sugar richness that rounds everything out. The result is a clean, inviting cup that feels both familiar and quietly distinctive.
